Hi everyone, pardon my ignorance but this process is all new to me. Can someone tell me what is a biometrics appointment and what is the I-551 stamp (and when is it issued)? Thanks

The biometrics appointment is when you go get your fingerprints, picture taken and signature ...

I-551 stamp is issued after you are approved at your AOS interview (this will be many months after you apply) ... It is my understanding that they don't always give you the stamp ... It is also my understanding that the I-551 stamp can act as your greencard until you get it in the mail ...
