I've been sending her money via Western Union every 2 weeks and have the receipts with both our names on them, I visited her in her native colombia while she was there on vacation in September (after we filed the I-129F) and we both have airline stubs proving we were there at the same time, as well as photos that clearly demonstrate we were in Colombia together, lots and lots of whatsapp conversations which I can print off (although they are all in Spanish and what a headache to translate them If i have to do that), some iMessage convos, I send her a Xmas package and she sent me a Xmas card as well as cards to my parents....

Will this be enough to show we are ongoing? I posted something like this a few weeks back but wasn't sure if I should add to the old one or not, forgive me if I should have.

I think you should be good with what you have. your conversations do not have to be translated as long as they are in the official language of the country where the visa is applied for.
