My husband's DS-2305 was received in a sealed envelope in his paperwork. Do we leave it sealed for his AOS paperwork, or do we open it make copies, etc....

What DS-3025? From the K1? Didn't you already submit that for the K1 visa interview?

The DS-3025, vaccinations worksheet? If it is sealed in the envelope you must turn into your POE upon arrival, then no, you can't open it and make copies. Usually people are given a copy of the DS-3025 at their medical to keep for their own records. If you did not receive a copy, you can ask the clinic for one, or even ask at the POE when going through immigration if they can make you a copy because you need it for adjusting status after you marry. Some CBP officers will do this for you.

If you meant the clinic gave you a personal envelope with documents for AOS that are not part of the sealed packet to turn in at your POE, then I see no reason why you cannot open that one.
