It's us again guys,

For the purpose of a K1 interview, how long in advance can the medical be done? If the interview date is postponed for a month or 2 will the beneficiary have to do the medical all over agin?

As far as I know the medical is valid for 6 months, unless something is wrong with any of the tests that have to be done.

Since you already got and sent your packet 3, I think it won't be a problem if the interview is in a couple of months.

Medical results are good for 1 year.

Note: do them fairly close to the interview, since it is good for 1 year hopefuly you can use them for AOS if that interview happens in the same 1 year period.
