I'm just starting to get everything together for my Lao fiance's K-1 application.

I'm a little worried about the affidavit of support, since I will be returning to the US in a week and am still looking for a job. I am going to wait to send in the 1-129F form until I get a job.

I know that any job I get will be well above the 125% of the federal poverty line, and will most likely be around $35,000 a year. However, I have been working independently the past 6 months and don't have much savings at the moment.

My fiance was also only educated until he was 12, after which he left to find work. His English is in it's beginning stages, though he is going to start taking English classes in the next couple months.

I have written a statement explaining our plans for him once he gets the US, which is to take adult education classes, get his GED, and eventually enroll in a heating and air program.

Do you think this could end up being a problem? Is there anything else I should do?

I know that you can get a co-sponsor, however I would rather not.

You can go ahead and send the I-129F now, you won;t need the affidavit of support till interview time, some 5+ months down the road.

Me: Irish/ Swiss citizen, and now naturalised US citizen. Husband: USC; twin babies born Feb 08 in Ireland and a daughter in Feb 2010 in Arkansas who are all joint Irish/ USC. Did DCF (IR1) in 6 weeks via the Dublin, Ireland embassy and now living in Arkansas.

Exactly. The I-134 affidavit of support is not sent with the initial I-129F petition. It takes months for it to be approved, so you do not need to wait a long time to file the I-129F. You should have plenty of pay stubs to show by interview time when you need the I-134. Also, you can certainly explain your fiance's plans for your life together here in the US, but it does not really matter for the financials. He could be unemployed and it would not matter. His income is not taken into consideration for sponsorship/support. Only yours or a co-sponsor's would be used.
