When a US Embassy closes because there is political tension in that country (like in Egypt now) does that mean they completely stop working? I understand that visa services stop & interviews are cancelled but what about those of us that had their interviews a month prior to the embassy's closure & are still in AR? Is there any hope that they work internally on those cases? And what would happen if heaven forbid the situation in Egypt escalated? What happens to our applications/passports then? :/

I don't think they work on anything if the Embassy is closed. They would eventually give passports back if they were to shut down for good or for an extended/unknown period of time.
