Even if you are able to get by with this for the K-1 interview using the I-134, you will not be able to when it comes time to file for adjustment of status and you have to supply the USCIS with an I-864. You must list the last 3 years of taxes on the form and send in the most recent year's transcript. If you did not file taxes, you must send them a statement as to why you were not legally required to file taxes. You cannot do either of those things at the moment. You need to file back taxes.

Make sure you get a copy of the co-sponsors birth certificate or bio page of passport to show he is a USC or LPR. If you get the tax transcripts you will not need to the w-2.

Really there is nothing you can do but go with a co-sponsor which it already sounds like you were planning on doing. You will need to fill out the I-864 as well. You will have to list your income, I would bring the letter from your employer stating your income, when you started and so forth. I am pretty sure your employer is not going to state in writing that he pays you under the table, so you are going to also need to write a statement as to why you have not filed a tax return for the time you have been working there. And this year I would suggest filing, even if you don't take the suggestion of the others and file your back tax returns you need to start filing from here on out. The AOS will come up faster than you think.

AOS happens soon after the foreign fiance(e) enters the US and you get married. If DR wants you to file an I-864, then how are you going to list your last 3 years worth of taxes on #25 of the form? How will you provide your most recent tax transcript or make a statement as to why you were not legally obligated to file taxes? Those things are required with the I-864 whether you fill one out now for K-1 and/or in a few months for AOS. The petitioner must file an affidavit of support and supply the financial documents that go along with it, even when using a co-sponsor. My advice remains the same. You need to file your taxes.
