Timeline

My fiancé has her interview on the 19th. She's from Honduras. Her daughter is on the petition as a k2. Does she need to bring a notarized letter signed by the father allowing my fiancé to take her daughter out of the country for the interview at the embassy? He already signed for her to get the passport. I don't know if this would be sufficient enough or do we still need that letter? Thank you!

it is hard to say. Each country's family law statutes are different, which result in different divorce laws, parenting plans, age of majority, custody laws, divorce decrees. A notarized immigration authorization letter may be a good idea.

In our case, my then-fiancee (K-1) got a "Notarial Certificate" letter from her ex-husband giving his permission for their 19 year old son (K-2) to immigrate to the US with the mother. (A "Notarial Certificate" [AKA-White Book] is a China-specific document, that is translated, notarized, certified translation bound document.YMMV.) The son had been living with the mother since the divorce. The son is near the age of majority. The Chinese divorce decree was quite simple compared to American ones. The child wasn't even mentioned.

We were unsure if such a document was necessary. However, we felt that it was better to be safe than sorry.

Check the country's laws, regional forum, interviewing consulate requirements for specific details.
