We got our package 3 from the embassy and sent it back already. Now we are actually waiting for the interview appointment and to enter the States.

What are the next steps of the paperwork as soon as the visa get issued?

Look here for the guides.

You will need to apply for your SSN approximately 10 days after entry. Not before because they may not have your name in their system yet.

Then after you get married you need to Adjust your status (AOS) to get your 2 years Green card and if you want you can apply for work authorization (EAD) to be able to work before you receive your GC if its too long and Advance parole (AP) if you need to travel outside of the US before you get your GC as well. Both AP and EAD are not necessary but recommended, depending on what you need.

I thought you need to get your SSN prior to getting married because then they can tell you you are not eligible to get SSN until you receive your green card because your not anymore on the K-1.....correct me if im wrong.

Something about you can work with K-1 (90 days), and once you are married you are not considered anymore on the K-1 status so you need the GC to show them your allowed to work...?

First thing is to settle in together. Because of the time change there will be a period of adjustment for both of you. Give yourselves a little time to relax and enjoy being together. I'm assuming this is a fiancee visa so you both need to get to know each other much better and make sure this is what you both want. Then assuming it works for you two, proceed with marriage plans. You have a 90 period starting from the date of arrival in America to get married and begin filing your paperwork for adjustment of status.

Don't rush things, but don't let it go too slow either. Once you have married then it is time to apply for adjustment of status. You can also apply for a work permit and travel document, called Advance Parole. Each application has a separate fee and different processing time. You should check the guides for each item and discuss whether you need or want all three applications. Understand this, once the adjustment of status interview is completed and the green card is issued, the travel document and work permit are unnecessary.

My wife receive her travel document and work permit three weeks before the AOS interview. The USCIS officer confiscated the work permit at the interview when she granted permanent status.
