I'm on a K1 visa (expired by less than a month) if I travel back to my home country while my GC is being processed, given that it is approved what problem would I encounter if my wife just sends it to me by Fedex and I use it to re-enter? I don't want to wait 3 months for an AP approval and I don't qualify for an emergency one.

Sounds risky to me. I wouldn't chance it. Too many things can go wrong. USCIS might check your entries - maybe not right now, but it could be in the process of approving your application and they see that you've left and re-entered, that makes your application void...

They will check your exit date and deny you entry as having adandoned AOS. They could also find out while processing the GC and deny it outright. If you don't mind waiting out the CR1 you can leave and file for the CR1 to return.

This will not be over quickly. You will not enjoy this.

Have you even tried for an infopass apt to see if you can get an AP card early? All they can do is say no, and if they do I wouldn't leave

Good luck
