I-290 Help Please

Hi everyone....so i was disappointed today when i got the mail saying my I-485 was denied as i missed out a document i was meant to send via RFE. However, i wasn't asked to leave the country or put into removal proceeding or whatever its called.

But i was given the option of refiling the form I-485 with out prejudice to the previous one filed or submit a motion Form I-290 with all the missing documents. Now the thing is this;

- when filing out i-485, was my joint sponsor meant to count his nephew and niece whom he claimed last year on his tax return last year or not as he moved to FL from OKC without them?

- Secondly, the document failed to be sent was the proof of assets. should i just get the missing document from him and send with i-290 or can i get a new sponsor who makes with 125% without adding assets??

- Finally does anyone know how to fill out the i-290 form as i do not know what to put at the heading where it says 'in the matter of:..............'

- Oh i forgot. At the time of initial filing, my wife was unemployed but he just got employed today and resumes work next week. so would it be go to notify USCIS of her recent employment?

I'm trying to send everything back to them by next week so swift answers would be great and very helpful.

Additionally, my wife and i just had our baby so would it be a plus to add his Birth Certificate as part of evidence to boost things up??
