what last name should i use when filing AOS, EAD and AP? should i use m y married last name or my maiden surname as to avoid confusion because all of my documents and papers are in my maiden name?

The short answer is what name you want on your green card it what is on your application. Of course you will list all prior AKA's. We put Y J's maiden name to keep it all straight (like you were thinking). At the AOS interview we asked the IO to change the name as married with her last as a middle name. She did advise they do not like hyphenated names. Hope that helps. A buddy of mine filed his with his wife's new married name, with no issues. The other reason we did it as a middle is your passport will still contain your maiden name (Passport never changed), easy to see the transition between passport, green card, SSC and DL..

You have to use the name you want to have on your Green Card. Like others said...Its UP to you. But remember that if now you use only your maiden name and later you want to have your GC changed in your married last name then you will have to pay for that change.
