oi!, tudo bem?first time posting in this board. i loveeeeeeeeeeee brazil! (i secretly wish my fiance was brazilian. shhh don't tell him)

anyway, i had this amazing corn pudding kind of thing at a brazilian per kilo restaurant yesterday. it was baked. does anyone have a great recipe?? obrigada. (my portuguese sucks, sorry...still learning)

Maybe it's a suflê de milho

- 1 cup of milk

- 3 eggs

- 1 tbps all purpose flour

- 2 tbps butter

- 5 tbps cheese parmesan ralado (dunno in english)

- 1 teaspoon baking powder

- salt

- 1 can of corn

Derreta a margarina, adicione a farinha de trigo, deixe dourar um pouco e acrescente o leite mexendo até formar um creme.Reserve. Bata as claras em neve, adicione as gemas e bata mais um pouco. Acrescente o creme reservado, o queijo ralado, o milho verde e o fermento em pó, mexendo levemente. Despeje a mistura num refratário fundo, untado com margarina e polvilhado com queijo ralado. Leve ao forno pré-aquecido até dourar.

In the beginning, my trips to Brazil and the Andes nations were regarding the native peoples living there because some of my family is part Native American, and are very involved in issues regarding indigeonous peoples. Eventually, we came just to enjoy the beauty, culture and FOOD!

Finalmente fiz um bolo de cenoura perfeito! Ficou tão fofo que acho que ficou mais fofo que o quando eu fazia no Brasil. E tá super gostoso! E todo amarelinho de quando a gente usa cenoura boa, daquelas bem laranjas mesmo! Estou feliz!

Ah, e ontem fiz um medalhão de filé com champignon e arroz a piamontese dignos de restaurante! Me senti comendo fora!

Here we go, what I like about this cake, is that if you have a strong enough blender, it's all you need.

Carrot Cake

3 medium carrots (peeled and cut in pieces)

1 cup oil (canola, soy, any oil works except olive oil)

2 cups sugar

2 cups all purpose flour

2 eggs

1 tbsp lemon zest (is that how you spell it?)

1 tbsp baking powder

a pinch of salt

Put oil in a blender and add carrots pieces little by little until it's all pureed. Add the eggs and the sugar and blend for a couple of minutes. If your blender is strong go ahead and add the rest of the ingredients into it and blend until mixture is smooth. If not pass the contents of the blender to a bowl and add the other ingredients and mix by hand.

Bake in a pan buttered and floured for about 30 minutes.

For brazilians who are used to the chocolate on top of carrot cake, here goes the icing.

4 tbsp nesquick

2 tbsp sugar

2 tbsp milk

Mix all in a bowl and spread over the cake while it's still hot.

Hmmmm, in Brazil I used to put it at around 300, here it's on medium, but remember to pre-heat the oven, I usually turn it on when I'm blending the oil and carrots.

300º Celsius = 572º F, it sounds like too much

No, 300F, or 350F, well, whatever is medium in your oven.

My oven you press bake then you choose the temperature (like it starts at 350 you click to raise or lower 5 by 5 degrees) and hit start and it automatically pre-heat and let you know when it's heated and voila
