What can I do before we are given a case numbe from NVC?

I had an I-130 interview on Sept 11th and it was approved. I am waiting for the approval letter to come in the mail. I know I don't have a NVC case number yet, but if there anything I can do now before I get the case number? If I can fill out forms, can I submit them now too? Or do I have to wait for the case number? Also does NVC allow submissions through email or do I have to use regular mail to send forms, etc?

You can certainly start preparing the forms and gathering the necessary documents. You can't SUBMIT them yet (you need a case number as well as the respective bill being paid for), but you can definitely put them together.

NVC does allow EP (electronic processing), but only for certain countries. Unfortunately, Australia is NOT one of those eligible countries [yet].
