Preparing to gather documents for interview

Timeline

A little background about my fiancee: she is Colombian but has lived in Madrid for about half her life (she's 25). She's a permanent resident of Spain and should get her citizenship at any moment. She will be going through the embassy in Madrid for the visa process.

What documents will she likely need to bring for the interview? She is in Colombia now for a month or so to visit family, and it would be a good time to gather any likely documents needed from Colombia (if any?) such as birth certificate, etc. I'm not sure if she would need anything from there or if her Spanish documentation will be sufficient for the embassy's needs.

Can anyone who has gone through Madrid offer some insight?

We've only sent off the i-129F on August 1, but I hope we are one of the lucky few that get there's approved in a matter of a few months. Hoping for Christmas but not holding our breath!
