We filed the I-751 last spring before the birth of our son on May 15. We received an extension of the green card for one year while they process our application. Should we send in my son's birth certificate even though our application is currently under review or should we just sit tight and wait to hear from them?

Just wait and hear from them. If you get an RFE, then you can send a copy of your son's BC as part of the package.
