I scrambled eggs and boiled a potato Friday morning. I refridgerated what was left over. It's Monday now. Do you think these leftovers are still safe to eat for lunch today? I heard of a two day rule when it comes to leftovers but ...

Serious question. Didn't know whom else to ask.

I scramble eggs and sausage and cheese every weekend and put it in containers in the fridge at work and have one every day. I've been doing it for years with no ill effect.

If not consumed within 24 hours I would throw them away.... you can not take chances with eggs... IMO

Hmmm...the eggs are fully cooked and have been refrigerated but it's been approx. 72 hours... hmmmm

Just taste them. If they taste "funny", throw them away. It's that simple.

All right. I googled. Why I don't think to do that first when encountered with such questions is beyond me. Anyway, I found this:

"Refrigerate leftover cooked egg dishes and use within 3-4 days. When refrigerating a large amount of a hot egg-containing leftover, divide it into several shallow containers so it will cool quickly."

Yeah, I'd say no problem after 3-4 days. Then again, if there was a problem, you'd know it right away.
