Now i was planning on heading out to my local SSO to apply for a SSN but on their website it doesn't really specify which documents to bring, I obviously don't have a US passport nor a US birth certificate. Should i just bring my Mexican passport along with the EAD card and the letter i received?

The website does state what you need:

http://ssa.gov/ssnumber/ss5doc.htm

Bring the SS5 form, employment authorization card, your foreign passport, marriage certificate (if you are female and changed your name) and foreign birth certificate.

Well that's a little embarrassing, since i didn't know what to bring i brought all of the above and i had no problem whatsoever. Was to expect my SSN in the next 2 weeks. Now just going to wait for the AOS Interview.

That's great news!

It's nice to find some things are a breeze to get when compared with what we are put through to get the GC!

When applying for SSN, will they allow the name change if you only have EAD and marriage certificate?

Do you mean get a replacement SSN card with your new married name, or are you applying for a new social security card?

Your marriage certificate is all the proof you need of legal name change (the rest of the documentation can be in your maiden name)

Is your EAD in your married name?
