We have all the stuff from the K-1, however we don't want to get joint accounts at the moment because I have a previous debt, and my fiancee is scared that they will seize the account. I know that can't happen, however she is worried and I can't convince her otherwise. Is having a joint bank account necessary for the AOS interview? Can we explain to them that this is why we don't have a joint account? Thanks!

For filing, there is no evidence needed other than your marriage certificate.

If you end up having an interview (not all K1s do) then things like mail showing the same address, insurance showing the spouse as the beneficiary, etc. Anything that has both of your names on it is a good idea to bring. The bank account would be really good, but if you don't have one then you don't have one. Add your wife onto everything you possibly can and be prepared to prove it.
