You should start collecting them. Read the instruction on the I-134 for the proofs that your fiancee needs to bring on her interview. If you meet the income requirement, she only needs the I-134, your ITR (2009, 2010, 2011), employment certificate, and 3-5 recent pay stubs. You can also add your bank statements and other assets if you want

The employment letter of my fiance that I submitted was dated on April 2, 2012 and my interview was last August 14. I just included his recent pay stubs. But I suggest to collect all the evidences closer to the interview date. In our case, there was a delay in the NVC stage for 42 days and I waited for 1 and a half month before I got interviewed, but I passed.
