I have just filed the I-129F. My passport expires in late 2013, so I am going to renew it soon. I notice I need to send in the current passport to renew it. Should I copy all the pages of the current passport to send to my fiance for her upcoming interview?

You should make a copy all the pages, specially the stamp for the entry when you visited your fiancee. As far as renewing it, you can always wait until next year. By that time, your fiancee most likely already got her K-1 visa.

But that would be filed with the I129F already (along with the ID page)? Surely you are sending your fiance a copy of the I129F package yes?

You get your old passport back along with the new one when you send it in for renewal. I still have my first passport from 1974 LOL
