My fiancee will be staying in USA with me for 3 months. We want to minimize our separation as much as possible. Can we file K-1 while she is in USA? Could we time it so that the interview will be within 2 months after she gets back?

You can't really time it because, while the standard processing time is 5 to 7 months, each case is unique and it could take more or less time... to assure minimum time apart, you should file as soon as possible.
