A little quick question here,

For my husband and I's joint tax return in 2010, my last name was spelled correctly. But for 2011, there was an extra letter at the end of my last name, and now everything being mailed to me (mailed to me as in, asking for Tax Transcripts) from the IRS has my last name with the extra letter at the end. I've already called and asked if it can be changed/corrected. It was then fixed in their system, but on the actual forms they cannot be changed. Do any of you think this will be a problem? I'm already planning on writing why my last name is spelled wrong when I do file, but I was still worried! Thank you in advance!

Tax transcripts have your social security number on them, that should be proof enough for them that it is you and not someone else with a similar name, lol. You should be ok.
