I would not give them originals (they will likely not be returned), give them copies. Take the originals to the interview for possible review by the consulate official.

NOA 2 is a just a notice, but you should keep the letter because you will need it when applying green card for your fiancé. There is nothing to fill out unless they ask for more supporting information. Don't send original supporting document during the process but interview. Yes, they will give it back if you show them during interview.
