i am filing my EAD along with my AOS papers to the chicago address which is given on the I-485 so i want to know which service center processing time do i check to find out which set of cases are being process now, is it my local office or the chicago office?

Oct-20-2008 NOA from VSC of I-751

Nov-11-2008 Received date for biometric for

Mar-10-2009 Transfered to CSC

May-27-2009 Green Card approved

File Citizenship {N-400}

Nov-14-2009 Mailed N-400 application

Nov-24-2009 Check cashed

Nov-27-2009 Rec'd NOA in mail, dated 11/23/2009

Jan-04-2010 Rec'd Interview date in mail

You are better off sitcking to VJ timelines

does anyone have any idea why the USCIS requires me to send my I-485 to the chicago facility instead of my local office in boston?

That is where they do the initial processing ... I am sure it helps them organize things easier ... Besides if you sent it to your local office you wouldn't have the chance of being transfered to CSC (meaning green card without an interview) ...
