I am working a fulltime and part time job. I just found out I will have to quit my part time job because my work schedule wll be changing and it will conflict with my fulltime job. I have already put this job down on my G-325A as a present and mailed our I-129F it in today.

Will this effect it or will i be able to change it?

You did not lie and therefore this should not cause an issue.

Since you will have to fill out a I-134 for the visa interview at the consulate, they might ask you why there is a discrepancy but as long as you meet the minimum 125% above the poverty level to sustain your SO, you should be fine.
