The hospital lost my fiancee's records. So she'll need to get new vaccinations. She was told she only needs two, but one is given in two doses and need to be a month apart from each other. We were hoping to get her interview before then. Is it true the vaccinations are only required for the AOS and not for the visa itself? Therefore, she would be able to get them here in the US?

Can they do a blood test to see what was already done? I had a blood test done years ago, when I came to USA and didn't need to do any additional vaccinations. I think the blood test is faster than doing two doses a month apart.

Yes its true the vaccines are needed to adjust status and can be done in the USA. They are included with medical exam, so most choose to get them during the exam. My wife arrived with many boosters required yet, but she got most done during her medical. The boosters she got in the USA, after we got married and she was on my insurance plan. One issue about not getting all the vaccines completed during the medical, is some civil surgeons will require a complete medical again when you get to the USA. This can be pretty expensive in some locations.

Yes, they are only required for AOS. If she can get them there at her medical and have them marked off on her DS-3025 though, that would be for the best. You only need one in a series done to file for AOS. If she has all the required ones at the time of her medical and they are marked off on her DS-3025, then you will not have to find a civil surgeon and pay more to get an I-693 filled out in the US. Major hassle for many people. Lots of civil surgeons insist on another medical that is not required and overcharge.
