Once your case goes to the embassy you will receive a packet with medical and other instructions inside it. You then will have your medical and your police certificates done. You MUST supply them with the certificates and you send them in prior to your interview. Once all is returned to the consulate they will schedule your interview.

Maybe this is true from "some" embassy's? The OP doesn't have any countries listed, but in Canada, while I get the police certficate done before my interview, I DON'T send it in prior, or need it prior to getting an interview. I checked it on the Package 3, and will personally BRING it at the time of the interview, as instructed.

You may want to go look on the Consulate website from your country.

Yes I should of posted to wait on your approval and see what the requirements are for your certain embassy.

You're a K-1, and this person is posting in the CR-1 forum. Totally different stuff.

The police certificate is needed at the NVC stage for applicants residing in Albania, Canada, Lebanon, Philippines, Turkey, United Arab Emirates or on the continent of Africa.

It depends from country to country. In Brazil you have to bring them on the day of your interview. This info I got from the NVC DS-230 package. Maybe you should check with your US Consulate/Embassy.

I don't know what you mean by not having a police certificate for a couple of years. They request that you get from all the places you lived for more than 12 months after the age of 16. In Brazil they only give the certificate from the time you are 18 (and it's accepted). Maybe you should double check that too.
