My Fiance is a teacher, and school is out for summer. She might not be able to get a letter of employment from her boss, as he is on vacation in Europe at the moment! She can get her tax returns, also her W-2 and pay stubs. My interview is next week, and she is coming to Belize. Can she go into the embassy with me? If they need proof of having met or engagement, she can tell them herself! She emailed her boss, but he is not responding at all.

Letter of employment is not mandatory. If you email the consulate they will tell you if your fiance is allowed in for the interview, each consulate is different.
