At minimum, the beneficiary needs to have a valid passport (that's also valid for at least 6 months beyond intended period of stay). Hopefully you have a passport as well (with stamps from travelling to visit them) as it will be good proof of a relationship for your K-1 application.

US citizen does not NEED anything. However, as stated above, passports stamps are useful proof of visiting.

The US citizen does not need a passport to file the I-129F petition. You can use a copy of your birth certificate to prove citizenship. However, you need proof of meeting face-to-face in the last 2 years prior to filing. Without passport stamps and boarding passes, what evidence do you have? Do you have receipts from being in Mexico? Hotels, purchases, ATM receipts, bank or credit card statements showing you used your debit or credit card while there? Photos taken with your fiance(e) on the dates you claim to be there and can provide the receipts to prove it can be used. Since you have not sent your petition yet, you could always visit again, make sure to get receipts, and take a picture together in front of a Mexican landmark holding up that days newspaper and have the date on the paper clearly visible.

The pictures are secondary evidence, so you want to focus on the other things Jay-Kay listed first. DO take recent pictures of you where you can easily tell that you are in SD or TJ... but focus on the other stuff! good.gif
