after entering USA can you return to Mexico

No, she will not be able to travel internationally until she has married you, filed AOS, and receive her travel permission, Advance Parole. If she leaves she will be stuck outside the US and you will need to start over with a spousal visa.

8/17/10: INTERVIEW DAY (day 123) APPROVED!!

ROC:
5/23/12: Sent out package
2/06/13: APPROVED!

Good advice! Don't do it till she has her travel permission or green card! Go somewhere in the USA for your honeymoon then later you can visit Mexico. If she leaves the country on the K-1 , i91 she will not be permitted back into the USA.
