Actual printed out trip itineraries are not solid evidence. You most importantly want to save boarding passes and make copies of your passport stamps. Save receipts from hotels, ATMs, tickets to places you visited together that show the date you went, and things of that nature. Photos are secondary, and no timestamps on the photos needed. You can take photos of you together in front of well known landmarks though. You should also try and get photos of you together with his family and friends too.
