They don't, unless you tell them. But would you lie to them and risk being permanently banned from the US?

they can tell by your tax returns....how many people you claim as a dependent....

Household size for I-864 is not the same as dependents for tax purposes. I can live a relative who is not my dependent but that relative still counts toward the household size in the I-864.

When the USC Sponsor signs the affidavit of support I-864 (where the subject of household size is declared), they are affirming the following:

"(b ) All the statements in this affidavit of support are true and correct,"

You're swearing an oath that you've told the truth. Lying there could be grounds for any benefit to be denied or rescinded (visa, PR status, citizenship).
