Scheduled Wedding before receiving K1 Visa

I find myself in a similar situation, except I didn't schedule anything until I had NOA2 and I only booked my hall and cake maker so far. The date was 1 week shy of 6 months out and I figured that would be enough time but with things dragging on it's looking like I'll probably need to reschedule. The hall I made clear that I may to do so with prior to signing a contract, the cake deposit is only $100 and if it's a total loss so be it. At this point I have no intention of picking another date until visa is in hand... my thoughts to you is work with your vendors, ask for which dates they have available going forward, pick the one that will save you losing the most money, and ask for a "soft hold" on that date, namely that they'd be willing to let you move it with no penalty however if they get a call asking about that date from someone else you will decide whether to "hard book" the date or release it so they aren't out business. This is what I'm going to try with my vendors if I need to reschedule.
