Go to Craiglist.org. Go to the right hand side and click on the "US states" then pick Texas then find the region you are looking at. Then under jobs choose "legal/paralegal" and see the listing you want. This is a sample link here in New Jersey that I found for San Antonio. http://sanantonio.craigslist.org/lgl/. Hope you find something.

I can't speak directly to the employment opportunities for paralegals, but San Antonio, Austin, and the whole I-35 corridor between the two is one of the fastest growing areas of the nation. I imagine the opportunity there is equal to almost anywhere else, and better than most. The quality of both cities is excellent as well, and the smaller cities in that area.....New Braunfels & San Marcos, or Kerrville over on I-10.... are lovely also.

Edited to add..... The whole area is very bilingual also. Not sure why you mentioned this, but I thought I would throw that out there.
