Worried about Juarez Consulate Receiving K-1

I am worried since I got myself in to a big dilemma I got my NOA2 on 04/03/2012 and my case left the NVC on 04/16/2012 and it was "received" in juarez on 04/19/2012 so I was checking out timelines and it would usually take 15 days after Juarez "receives" the k1 from the nvc to start mailing the invitation letter. So I was dumb and I started making appointments I made the ASC Appointment for 05/18/2012 and the interview for 05/21/2012. Today I called the U.S Visa phone number 703-xxx-xxxx and I asked if Juarez had actually received and processed my K1 packet and I was told it still had not been "updated" and he couldn't explain it to me or give me any other info. So I am worried they wont "process" update my k1 packet in time for the interview I had scheduled, in theory I can reschedule but I paid for everything already tickets hotels etc, has anyone else cut it this short? can you guys tell me how long after your NOA2 did you receive an Invitation letter? or how long after when it left NVC did you get an invitation letter? Below are the plans I had. Any help or similar stories would be appreciated

Wednesday May 16 Fly from Tijuana to Zacatecas

Thursday May 17 Bus from Zacatecas at 7:00 am to Guadalajara arrive at Guadalajara at 12:40pm

Thursday May 17 Fly from Guadalajara at 6:55 pm to Cd Juarez arrive at Juarez at 8:05PM / Get situated in Best Western Plus Plaza Juarez

Friday May 18 get in line for Medical test at 6:00 AM

Friday May 18 ASC appointment at 1:30PM

Saturday and Sunday Relax

Monday May 21 Interview at US Consulate at 7:30 AM

Tuesday Wednesday Thursday Friday wait for visa to arrive at dhl

Saturday May 26 cross to the US at 06:00 AM

Saturday May 26 Flight from ELP to LAX at 5:20PM

Thats what I am planning on doing but I am worried If they dont process my case before I get to Juarez
