I'm about to file my aos in may and my medical expires in June, when will it become a reason for an rfe, before the interview or during the process before the interview ?

At any stage of the process. Several people have been RFE'd at the interview and of course most people who get RFE'd get them before the interview (if you have one that is). Until you get the GC you're "at risk" of an RFE.

If the green card is not issued before it expires. My guess is it will be an issue before the interview. Why not just get another medical now and include it when you file?

Well a financial situation just came up that makes me want to put off the medical for as long as possible, however I want to be ready for it. You know,I know I will have a limited time to provide the RFE and I don't want to run out of time

You'll have about 86 days.
