Gonna meet my wife there for interview when scheduled. Is arriving the day before document intake day enough, or should we arrive earlier (i.e. is there other things we need to do before interview)?

I would bring all you can better than needing it and not getting an approval. Good Luck.

You should bring all evidence and then some just to be on the safe side, even if they may not look at it.

I would say 2 to 3 days to get the examination and vacinations and hopefully you will recieve the paperwork the same day. If you can't get in on the same day then this would allow you a safety net. Also if your document turn in day is Monday then most of these places are closed on the weekend and your wife would need the exam at least on Friday.

One more thing. I plan to wait with my wife for Visa, then come home to the US with her. I know that anything can happen, and this might not work. However, IF all goes well/without incident, how long does it typically take to get visa after interview assuming approval with no problems?

My wife had her interview on the 14th and her Visa on the 16th, I'm not sure how long it takes these days.

It doesn't sound like there is any hard and fast timeframe, it could be 2-7 days.....

After the interview, to save time, I would like to go back to Nanning to help her prepare. Will they send the Visa there? My wife is very nervous about this, and thinks it's better to wait in Guangzhou.

not much, even if you wait in GZ, the consulate send the visa to a post office, you have to go to the post office to pick up anyways(you don't pick it up at the consulate).
