If he has his home country driver's license and an international permit with it, he is good for a year.

Foreign motorists from any of the countries who are party to the United Nations Convention on Road Traffic (Geneva, 1949) or the Convention on the Regulation of Inter-American Motor Vehicle Traffic (Washington, D.C., 1943) who visit the United States as tourists can drive legally using their valid domestic driver's license for a period not to exceed one year from the date of arrival. They may drive either a personal or rental car.

And I just called about this last week for my wife. She wants to drive here, but we didn't get her to the DMV yet to apply for a permit and licensing. So I called to ask and they said as long as she has a valid license from Greece and the international permit, she's fine for a year.

I am not familiar with the K1, but I assume after he receives his immigrant visa/green card, it will be valid for more than a year and he can get a license then.

You need to file for AOS and EAD. He can use either the EAD or the green card to go get the license.

Also note the K-1 visa is valid for 6 months not 60 days. It also expires the day you enter the USA.

The I-94 is the important paper and it is valid for 90 days after entry.

My husband just got her permit on Saturday. We took the NOA letter from our AOS application proving that we are in the process of adjusting status from K1. I think the form is called the 797 or something like that. I heard them ask another person there for the same letter.

Have you checked your stat's website that details the items needed? My state has a section that deals with immigration and tells you the exact items to bring.

Good luck!
