My fiance is coming here on a K-1 visa in just a few weeks. Last time she tried to come visit me they gave her trouble because she didnt have a round trip ticket and thought she was trying to illegally immigrate. However this time she has our visa and will be coming from Canada over air. Would we still need a round trip ticket to please the officers or is a one way good with a K-1 Visa?

I think the round trip ticket is not necessary as the K-1 visa would signal the likelihood of staying in USA.

OP: could you please take the time to fill out your timeline here as it helps the the accuracy of processing time statistics...thanks

K-1 implies she is coming to the US to live with you and even though it is classified as a non-immigrant visa the fiancé / fiancée is planning to immigrate so a one -way is fine as you have been apprpved.

The reason CBP didn't like it before was because she did not have a visa and one-way tickets look like you're not planning to go back. I guess a lot of Canadian's and South American's come to the US and decide not to go back?

Doesn't mattter. She is coming this time WITH the intent to immigrate. The visa she has allows that. Get whatever is cheapest.

I would use whatever is cheapest. When I helped my wife move we used a round-trip ticket for her (separate itineraries) because it was cheaper than a one-way non-stop (much cheaper). However remember to cancel the return flight (e.g. call the airline) if you get a round-trip ticket. Some airlines have increased penalties for not doing that.

Came to the USA with a one way ticket purchased online. Buy what is in the best price range for your budget , one way or round trip. Happy to hear you will be together soon, the best to you both :)

Flew in on one-way ticket bought on miles - as mentioned before, no one cares - but as mentioned before, if it's not a "budget airline" like Jetblue, SW etc. then most of the time return is cheaper and it's fine to book.

HOWEVER, make sure to cancel (or postpone) your return flight so it's not before her AP is granted - there have been stories on this forum where people were denied at AOS because the airline never took them off the passenger list when they were just not showing up for the flight and thus USCIS considered the AOS application abandoned.

Good tip! Definitely something I could see being overlooked!
