I am filing AOS for my husband and will need a co-sponsor because my income for the past three years has been insufficient. My question--does the co-sponsor need to be a family member or can it be any U.S. citizen? Does the co-sponsor's relationship to us have any bearing on our petition being approved? We are looking to have a family friend be the co-sponsor,and I just want to make sure this is okay.

can be Family, friend or person you work with - as long as they make enough for their family + the immigrant.

A Joint Sponsor (the US government does not use the term co-sponsor) can be any US citizen or any LPR. The person must be at least 18 years old and domiciled (residence) in the US. The person does not need to a family member. A US citizen friend or LPR friend over age 18 and living in the US can be the Joint Sponsor.
