No it doesn't. It all depends on the household size. See the link Inky posted above.

Is there a certain amount of years worth he'll have to show, like 3 years worth of taxes?

It depends on which consulate you would be going through. Some only require the most recent year, and others want the 3 most recent years. Have him get the last 3 years worth of tax transcripts from the IRS for free just to be prepared.

If I am able to obtain a work visa in the us, and am working and living there legally. Would this number decrease as I have a means of making my own money or no because I am still under an obligation of having to renew the work visa?

I am not really sure I understand what you are asking. If you are planning on entering the US with a K-1 and getting married, you won't be getting a work visa. After you are married, you will file for adjustment of status (AOS) and will file for an Employment Authorization Document (EAD) at that time. The I-864 that your husband will provide when you file your AOS will happen before you are authorized to work. The numbers will not change.
