Internships while waiting for work permit?

Hi,

I am still in the process of getting my fiance visa, but my fiance and I are already planning most stuff in advance. I will be done with My Masters Degree in international business communication, English business linguistics and American studies this spring, and hopefully I'll be moving to be with him in California before the summer. I know I will not be able to work without a work permit, however, I was wondering if internships would count as work? I'm just trying to build myself a strong resume with some American references?
