I lined out the items you don't need, made one correction (the DS-260 letter is from the NVC, not USCIS), and placed the remainder of my answers in bold:

Ds260 letter from USCIS NVC

passport brth certif

my passport and my mexican visa my birth certif

my bank account statment If it has both of your names, then go ahead and bring it, otherwise, that is unnecessary

my dad is sponsor so his tax forms as well as identification

our marriage certif.

kids birth certif

kids consular report of birth abroad

old emails (a few)

printed off my old flight confirmations traveling here

pictures of kids and of us

Am I missing ANYTHING?

Does he need college records or anything? No

Life and medical insurance, credit cards together, taxes home and federal, photos of you and friends. The more the better, you will be fine. At least you are there.

In Arizona its hot hot hot.

Yes, I think tax returns (past 3 years) are huge if you have them available. Both yours and from your co-sponser if you got one. Aside from that I think you're set. Good Luck!

You will find that CDJ asks for very, very little, so you have way more than enough. Please read the embassy reviews for the last 6 months or so and you will feel very comfortable.
