Most of the interview seemed to involve my wife chatting with regarding non relevant topics whilst I searched through all the docs I had brought. Took everything I could think of.

Mandatory, definitely not, and not even necessary, but if you have them absolutely include them.

We didn't take any photos. After a 3 week ordeal of jumping through the hoops Moscow bureaucracy, literally waiting and paying for an "official stamp" to validate an "official stamp" (I'm not exaggerating), my wife and I were exhausted. We sat in the couch at the civil center and just waited for our name to be called. After a while, it felt like something was going wrong and I joked that maybe they need another stamp. My wife looked at me and said, "If we need another stamp, we're not getting married!" I laughed, HOPING she was joking.

Anyway, requiring photos doesn't seem like it should be mandatory (it feels prejudicial and more a requirement for a K1 application) and I've read elsewhere on this site that other people didn't send any. They just submitted their marriage certificate and everything went fine. I've never read anything that states it's a requirement.

The marriage certificate is legal proof of authenticity.

I've yet to submit any photos or be asked for any photos. We've gotten through USCIS and NVC with no RFEs.

I guess he'll take a couple pics with him to the interview.

We had a simple wedding at the courthouse with two witnesses/friends and a nice dinner afterwards. One was the designated photographer. He took pictures for us. Sent in the AOS with the marriage certificate and no photos. Took the photos to the interview, but they were never asked for. The IO did want to see the original marriage certificate and kept another copy. To my mind photos are secondary evidence that can support primary evidence, but by themselves are worthless as they can easilly be faked.

We had simple civil marriage and had dinner with friends n family. We have tons of pictures together with friends and family. We are looking to have our dream wedding some time in the future, but we can not afford it now. Is it necessary or mandatory to have wedding pictures to proof marriage is genuine?

If you haven't already, also write of an evolution of relationship letter to take with you to the interview. Some consulates want to see this but even if the consulate you're dealing with doesn't require it, there is nothing to loose by having one ready.
