hey i just had a question about what forms to send back to the london consulate when we receive packet three.

do we go ahead and send in i-134, ds 2001, ds 230, ds 156, ds 157, and ds 156k or just the ds 2001 and bring the rest to the interview? and do we need to package it the same way as the fiance petition (i-129f) or just put everything in an envelope and let them sort it?

http://london.usembassy.gov/iv_15.html See Step 2 about the DS-2001. When you have obtained all of the required documents and are prepared for the visa interview, then you send the DS-2001 in. Read about the cover letter. If you have everything gathered early, it can go in the envelope with the Step 1 forms. If you need time to get documents in hand, then send the Step 1 forms first, gather you interview documents, then in a separate mailing notify them you're ready by sending the DS-2001.
