Our K 1 was denied, or put on hold, because I did not submit my tax returns from 2010 with the I 134. I did not file last year because I worked as a volunteer and earned less than $4000. I am going to submit a letter explaining this. Does anyone know if you can sponsor a person if you do not have a tax return from the previous year, but are currently employed full time?

Yes you should be able to if you can prove CURRENT income however some consulates are picky. Have a co-sponsor lined up just in case.
