So we applied for EAD and AP at the same time as we filed for AOS, and I have been getting regular updates on the AOS and EAD, but there have been no updates on the AP since the NOA1, and no touches on the USCIS website. However, when Duds received his EAD card last week (YAY), it said it was valid for use as AP. Is this normal? and is it safe to use this to travel internationally? (we have no plans to travel, but if there were to be any family issues in England we'd like to know that it would be OK for us to go).

If it says valid for use as AP then that's all you need to travel. The cards are 'combo cards' these days, so valid for both EAD & AP.

Yes it is normal.

The new system is the EAD and AP come in ONE card. There are no more " AP papers " that you use to travel with. You just use the combine card.
