this might seem stupid too a lot of you but i'm just wondering, when you apply for the AOS and your k1 expires do you have to leave the country or does the AOS process allow you to wait till you're approved?

The AOS process not only allows you to stay, it more or less forces you to stay. After you enter on the K-1, you will need to marry, file AOS, and receive travel permission (called Advance Parole) to leave the country without abandoning the whole process. Expect a few months where you can't travel. Good luck!

8/17/10: INTERVIEW DAY (day 123) APPROVED!!

ROC:
5/23/12: Sent out package
2/06/13: APPROVED!
