Soo I was reading, that a significant (unmarried) other can come to the US under another type of visa (visitor, holiday etc.)

and once they are here they can apply for a green card through special catagories (Nonimmigrant (includes fiancée))

Is that even true.?????????????

Or should i just stick to my K-1 Fiancee visa Process. ??

If you want to do things the legal way, stick to the K1 process.

Me: Irish/ Swiss citizen, and now naturalised US citizen. Husband: USC; twin babies born Feb 08 in Ireland and a daughter in Feb 2010 in Arkansas who are all joint Irish/ USC. Did DCF (IR1) in 6 weeks via the Dublin, Ireland embassy and now living in Arkansas.

Oh man! I was hopping for another visitor to marriage to AOS debate! :rofl::thumbs:

You may want to look into the rules. If you come here on visitor visa and AFTER entering US decide to get married, this is OK to AOS. If you KNOW that you are coming to get married to AOS this becomes illegal and material misrepresentation. Primarily this is because you are asked when filling out application for visitor visa if you have immigration intent during your visit. This is a difference. In this particular case OP cannot do this. I am merely suggesting the best path for every OP.
